1 head Cauliflower
1 white onion
3 cloves garlic
5 cups veggie stock
1 can coconut milk
1 tbsp curry paste
Preheat oven 350. Cut veggies and roast with garlic in oven for 30 min. In a large pot bring stock, coconut milk & curry to boil. Add roasted veggies and cover & reduce heat and simmer for 15min. Remove and purée. Add salt & pepper to taste.
