1 cup regular rolled oats
1/2 cup maple syrup
1/4 cup almond butter
2 tbsp coconut oil
1 tbsp vanilla
1/2 tsp salt
2 cups crisp rice cereal
1/4 cup goji berries
1/4 cup pumpkin seeds
1/4 cup pistachios
1/4 cup ground flax seed
2 tbsp chia seeds
1/4 cup semis sweet mini chocolate chips
Preheat oven to 350. Line a baking sheet with foil. Coat foil with cooking spray. In small saucepan combine wet ingredient heat over medium and stir until melted down and smooth. Remove from heat. Stir in vanilla and salt. In a large bowl combine dry ingredients, nuts and seeds. Mix wet and dry ingredients together. Press mixture into baking dish. Sprinkle chocolate chips over the top. Press chocolate into bars. Bake 12-15 minutes or until firm. Cool on wire rack. Cut in bar shapes and freeze if you so desire. Thank you to Sandy Pullan for recipe.
