10 lbs Fresh local tomatoes
1 big white onion
Basil and oregano(optional)
Garlic cloves
Salt and pepper
Cool on medium heat for 30 min then reduce to low for another 1-2 hours. Add 1/2-1 cup white wine. And 1/4 cup sugar near end
Let cool slightly then use hand processor or large food processor to get out chunks. While still want add one can of full fat coconut milk. Top with Parmesan cheese or fresh basil
*add some extra fun by serving with garlic bread dip
*add tortellini noodles so make more substantial for a more filling meal
